The Japanese Cuisine course organized by BASARA milano japanese food academy follows a complete and detailed program that upholds the traditions and customs of the Japanese culture.

An engaging training course awaits you (250 hours including apprenticeship) that will teach you basic and advanced techniques, secrets and ingredients for preparing the entire variety of traditional Japanese culinary dishes.

OBJECTIVE: a course that will prepare you for the working world


The Professional Japanese Cuisine course is a practical  and performing course, designed to ensure a highly professional preparation and a quick placement in the working world.


STRUCTURE: theoretical-practical lessons + training internship


The course takes place in two distinct and fundamental stages: 90 hours of theoretical-practical lessons and 160 hours training internship.

The cultural and technical aspects of Japanese cuisine, HACCP and the behavioral ethics in cooking, cutting, filleting and cleaning fish are the basic topics from which the educational path begins. The course then delves into sushi lessons including nighiri, hosomaki, uramaki and sashimi as well as hot cooking elements.


INSTRUCTORS: there are 4 instructors for a class of maximum 10 students


The course will be run by the great chef Hirohiko Shimizu, who will coordinate a teaching staff made up of certified Japanese sushimen and experts in nutrition and food hygiene. 
Every issue will be addressed with a practical approach: through their professional experience, you'll in fact be able to confront yourself with the reference market that awaits you.

JOB OPPORTUNITIES: PROFESSIONAL CERTIFICATE ISSUED FOR USE IN THE CATERING SECTOR 


At the end of the course, and after succesfully passing the final exam, a professional training certificate will be issued, which will be your passepartout in the working world, certifying both course attendance and internship. 
Furthermore, BASARA milano is constantly expanding and has working positions available in its restaurants for the course's best students.
