The Professional Japanese Cuisine course is a practical and performing course, designed to ensure a highly professional preparation and a quick placement in the working world.
The course takes place in two distinct and fundamental stages: 90 hours of theoretical-practical lessons and 160 hours training internship.
The cultural and technical aspects of Japanese cuisine, HACCP and the behavioral ethics in cooking, cutting, filleting and cleaning fish are the basic topics from which the educational path begins. The course then delves into sushi lessons including nighiri, hosomaki, uramaki and sashimi as well as hot cooking elements.
The course will be run by the great chef Hirohiko Shimizu, who will coordinate a teaching staff made up of certified Japanese sushimen and experts in nutrition and food hygiene.
Every issue will be addressed with a practical approach: through their professional experience, you'll in fact be able to confront yourself with the reference market that awaits you.
